This morning is BEAUTIFUL in Portland. The leaves on the tips of the trees are juuuust starting to turn red and yellow. It is clear. A slight breeze is blowing through the neighborhood and a waning moon was hanging right at eye level when I took Fisher out for a walk early this morning.
It is decidedly fall. And time to break out my grandfather's cast iron skillet.
I learned how to make the classic dutch baby pancake from my aunt, who I forced into the kitchen to teach me something while she was visiting me in Seattle over 12 years ago. The recipe is so simple--melt 3T of butter in a skillet while the oven is preheating to 400 degrees. Mix together 3 eggs, 3/4 c flour and 3/4 c milk in a separate bowl, pull the heated pan out of the oven once it hits 400, dump in the batter and bake (no peeking!) for exactly 20 minutes. It comes out puffy and airy, looking as if it's going to climb right out the pan. A quick drizzle of fresh lemon juice and some powdered sugar and it's quite possibly perfect as is.
Buuuuut ...
Then there is THIS recipe. An APPLE dutch baby. And September has been a decidedly apple-y month around the Simply Savvy Kitchen.
Apples sauteed in butter before getting a sprinkle of cardamom and honey? Um, yes.

That looks SO Yummy! We made puffed pancakes this weekend. They were just 'ok'. LOL
